Why Buy Heritage, Pastured Pork?

Breed: Modern commercial pigs have little marbling and bland flavor. Heritage breed pigs are known for their delicious flavor.

Sunshine: Pork from pigs raised indoors is missing many critical nutrients which can only come from pork raised outdoors. Overcrowding and small pens, create stress and a need for antibiotics.   Our pigs are raised outside where they can eat grass and soak up sunshine while growing at their natural pace. This produces healthy, flavorful pork filled with vitamins A, D & E.

 Feed: Most pigs are fed cheap grains and often waste bakery products and pushed for unnaturally fast growth. These pigs don’t have the quality and flavor of older, pastured pigs fed a healthier diet.  Our pigs eat pasture, hay, raw milk and local grains. This is more expensive, but it produces better tasting product with a higher ratio of healthy monounsaturated fats.

Humane: Most pigs are loaded on trucks and hauled to slaughter. This is stressful for the pigs and creates adrenalin, which is bad for meat quality and taste.  Our pigs are humanely harvested with dignity here on the farm by a professional butcher. They experience no fear or pain which results in superior tasting pork.

Aging:  Many processors don’t age pork. That means more profit, but at the expense of quality. Our certified butcher takes the time to age our pork before cutting it to each customer’s specifications. Just like beef, pork benefits from aging.

Hanging Weight: 100 lbs – Pounds in the freezer: 70
Freezer Space Needed: 3 cubic feet
Ham: 15 lbs, cut as roasts or steaks
Roasts: 2 shoulders and one loin 2-4 lbs each
Pork Chops: 13 lbs  (23 1” chops)
Ground Meat/Sausage: 10 lbs
Bacon: 8 lbs
Spare Ribs: 3 lbs
Stew Bones: 8 lbs
Lard to Render: 5 lbs

*All weights and amounts are approximate and will vary with the size of the pig and your custom cutting preferences.  (i.e. if you order ½” chops, you will get twice as many as if you order 1” chops.)

Costs

Pricing is $3.75/lb hanging weight (weight of the carcass without head, skin, feet and organs) plus processing costs. (Discounted price of $3.50/lb is available for advance orders.)

Basic processing costs are $17.50/half + $0.42/lb. Additional costs for smoking and sausage are listed on the order form. Most people pay around $100 for processing but that will vary depending on what you choose. (Usually $60 – $125)

A deposit of $100 is required to hold your half. We raise a very small number of pigs at a time so we recommend getting your deposit in early. Call to check availability and learn more about ordering custom freezer meat.
